Zucchini soup with tarragon
Zucchini is vegetable with many benefits. With its mild flavour and velvety texture, it’s perfect for simmering a delicious soup. We sought a flavour combination between zucchini and an herbaceous plant to lightly perfume the velouté and bring a whole new dimension to it. This harmony will be achieved with tarragon, which adds a slightly aniseed taste and a touch of freshness reminiscent of licorice.

If you’d like to spice up this recipe, simply fry some bread croutons in a little olive oil and garlic, then add them to your soup bowl with a generous twist of black pepper.
