Leek & chervil soup with meatballs

Did you know that leek cultivation is one of the most important outdoor vegetable farming activities in Flanders? Indeed, Belgium offers ideal conditions for leek cultivation, thanks to its climate and fertile land. This allows for year-round production of leeks, although summer leeks are less suitable for soup. Our mission is to highlight this vegetable, and what better accompaniment than chervil? For added indulgence, this version includes Belgian-origin chicken meatballs.

To liven up this soup, you can make bread croutons with green pesto. Brown the bread in a frying pan with a little olive oil. Once lightly browned, you can add a little pesto. Stir to blend. Add a few sprigs of fresh chervil and enjoy.
