In Andalusian Culture, Salmorejo is considered an ancestral dish. Its thick and creamy texture makes it a hearty and refreshing dish that evokes the sun and the pure taste of tomatoes. Thus, our version highlights the delicious flavour of a Belgian summer tomato and its ripe red peppers.

You can enjoy this cold soup like a true Andalusian.
To do this, you’ll need to cook the eggs for 12 minutes to obtain hard-boiled eggs. Once cooked, cut your eggs into small cubes.
Pour your soup into a bowl, add the cubed eggs on top and pieces of Serrano cured ham.
Finish with a drizzle of extra-virgin olive oil.
Enjoy.
